Feeling lazy this weekend but still want to eat something delicious and healthy? This recipe is perfect for making a delicious chicken meal of any kind. It’s also great for meal prepping or just having in your fridge so you have some chicken to snack on when you feel like reaching for the cookies. Here’s the recipe, enjoy!
Ingredients
1 large whole chicken 4-5 lbs deboned (ask the butcher to do it for you because ain't nobody got time for that)
1-2 teaspoon kosher salt
Instructions
Salt the chicken with 1 teaspoon of salt 1-3 hours prior to cooking and put in the refrigerator and take out 10 minutes before cooking.
Preheat the broiler. Put the chicken, skin-side up, on a rimmed sheet pan and place it under the broiler, about 3 inches from the heat, to brown and crisp the skin. Broil for 5 minutes, rotate the pan half way for even browning and broil for another five minutes. Turn the oven temperature down to 250°F and cook for 25 minutes.
Cut the chicken into whatever size pieces you want. Or just pick it up and eat it like you're a Viking.
